We all know that feeling: It’s time for dinner…


You’re tired and the idea of cooking (and cleaning up dishes) is just... ugh.


Well, I’ve got you covered today with this One-Pan Lemon Garlic Chicken & Veggies recipe!


It’s one of my secret weapons for a simple, no-fuss meal that’s jam-packed with flavor and nutrients.


Here’s how it works:


Step 1: Grab your favorite protein. I love using juicy chicken thighs, but you can use chicken breasts, tofu, or even salmon.


Step 2: Add a rainbow of veggies. Think broccoli florets, bell pepper strips, and baby potatoes — but honestly, whatever’s in your fridge works.


Step 3: Season it all up! Drizzle with olive oil, sprinkle on some salt, pepper, onion powder and garlic powder (iykyk), and toss a few lemon slices on top for that zesty goodness.


Step 4: Roast at 400°F (200°C) for 25-30 minutes (or until your protein is done). Your house will smell AMAZING, and cleanup is practically nonexistent!
