Lemon Blueberry Protein Muffins

Mornings can be a little hectic, right?


You’re trying to get out the door (or just wake up in peace), and the last thing you need is to be hungry an hour later because breakfast was an afterthought.


That’s why I love these Lemon Blueberry Protein Muffins so much.


They’re high in protein, naturally sweet, perfect for meal prep… and DELICIOUS. 


Here’s how to make them:


Lemon Blueberry Protein Muffins- Makes 12 muffins


Ingredients:

  • 2 cups almond flour

  • ½ cup vanilla protein powder (your favorite kind!)

  • 1 tsp baking soda

  • ½ tsp salt

  • Zest of 1 lemon

  • 3 eggs

  • ¼ cup honey or maple syrup

  • ⅓ cup unsweetened applesauce

  • 1 tsp vanilla extract

  • 1 cup fresh or frozen blueberries


Directions:

1️⃣ Preheat oven to 350°F (175°C). Line a muffin tin with liners.

2️⃣ In a large bowl, whisk together the almond flour, protein powder, baking soda, salt, and lemon zest.

3️⃣ In another bowl, whisk the eggs, honey (or maple syrup), applesauce, and vanilla.

4️⃣ Combine the wet & dry ingredients, stirring until just mixed. Fold in the blueberries.

5️⃣ Divide the batter evenly into muffin cups and bake for 18-22 minutes, or until a toothpick comes out clean.

6️⃣ Let them cool slightly, then enjoy!


Store in the fridge for up to 5 days or freeze for a grab-and-go option.
