Meet Your New Favorite Side Salad

A fresh, new year means fresh, new recipes! 


This Cucumber Avocado Salad is not only delicious, it also makes for a great snack or side dish.


And if you need a little protein kick, add some chilled, cooked shrimp.


The secret to this recipe is letting those fresh veggies soak up all the goodness of the dressing — so don’t rush this part! 


Here’s your recipe:


Cucumber Avocado Salad (Makes 4 servings)


Ingredients:

  • ¼ cup (15 grams) sweet onion, sliced thin

  • 1 lemon, juiced

  • 3 Tbsp extra-virgin olive oil

  • 1 Tbsp each of thinly sliced fresh mint & basil

  • ½ tsp pink Himalayan salt

  • 1 cucumber, thinly sliced

  • 4 plum tomatoes, seeded and diced

  • 1 avocado, halved, pitted, and cubed


How to make it:

  • Toss the onion with lemon juice in a large bowl and let it soak for 10 minutes.

  • Add the olive oil, herbs, and salt—whisk to combine.

  • Add the cucumber to the bowl, tossing to coat well, and let it stand for another 10 minutes, gently stirring every few minutes.

  • Stir in the tomatoes, and then gently fold in the avocado.

  • Transfer to a platter, serve, and enjoy!
